Aqua Expeditions has announced a series of exclusive itineraries hosted by culinary heavyweights Benjamin Cross and Pedro Miguel Schiaffino.

The two chefs will cruise in the Indonesian archipelago and the Amazon respectively, each offering different windows into unique cuisine and culture, with the celebrated chefs taking you on a series of market visits, tastings, master cooking classes, and more.

The Australian-born Benjamin Cross will host the Indonesia voyage aboard Aqua Blu, and will be serving up guests dishes such as 48-hour beef short rib rendang, Balinese suckling pig with bumbu Bali (Balinese spices), organic Javanese prawns marinated in fragrant oil and lime, and freshly handline-caught fish grilled with Balinese sambal.

On Mr Cross’s resume is working at Watego’s in Byron Bay, Craft in New York, the three-Michelin-starred Can Fabes in Catalonia, Ku de Ta in Bali and then opening a series of his own restaurants.

When you’re not either experiencing flavours or learning where they come from, you’ll also dive with Manta Raya, hike on Pada Island, observe Komodo Dragons, search for secret waterfalls, and more.

Mr Cross’s hosted cruise goes from September 9 to 16, 2023, with everything included.

On the other side of the globe, Pedro Miguel Schiaffino will take you around the Amazon, exhibiting his trademark Peruvian Japanese cuisine, bringing together Amazonian ingredients and traditional cooking style. 70% of all ingredients used onboard are sourced from Peru and Ecuador, with highlight dishes including Galapagueña lobster lettuce wraps with Acevichado dressing, delicate potato llapingachos, tuna crudo, barbecued plantains, and shrimp ceviche.

Mr Schiaffino was head chef at Malabar and amaZ in Lima, is on the Latin Cuisines Advisory Council, and runs the acclaimed Schiaffino Gastronomika.

The acclaimed chef will host two departures in 2023, one in May and one in October, offering a whole different perspective of the Amazon.
